I had once wanted to do this, but with porous travertine instead. I was told that it was a bad idea because you'll never get it clean or looking new again. Especially behind the stovetop where things are much more likely to splash, get greasy, or stain.

It will be a cleaning nightmare as it is very porous and even sealing won't help it any with tomato splashing while cooking as it will cause a discoloring. The stone can easily chip too and due to the roughness of it any rags and in particular sponges will leave some traces on it as well. If you want to use it then use it outside of any splash zones.

Pretty, but impractical.

Agree with the other comments - it is highly porous and will be a cleaning and maintenance nightmare
