OK, just finished Sunday dinner (our noon meal) of onion pie with brats on the side. I have to say the dish was quite sweet, due to the sweet onions. We decided that Swiss cheese or some hot pepper flakes or other savory seasonings would help to balance the sweetness. Mushrooms could be another delicious addition. I would probably just prefer a heavily onion quiche, rather than the overwhelming onion content of this pie. I still look forward to any onion recipes. Anyone with a great French Onion Soup?

Sounds a bit like Tarte Flambee or Flammekueche, albeit thicker and with more onions. I love onions and I'm sure I would like the recipe you made, though personally I never cook with sweet onions even when they are called for in a recipe. IMO they have no flavor at all when cooked, especially when caramelized. It seems counterintuitive that a yellow onion would be sweeter and more flavorful when caramelized than a sweet onion, but that is the case in my experience. Your suggested addition of cheese or spice would definitely help!
