Nice. Keep the soil a bit drier otherwise you risk fungal infection commonly called "damping off". Once they have a pair of true leaves then the risk reduces. You can start lightly fertilizing after the first pair of true leaves appear. 1/4 strength of regular fertilizer should be good enough.

We really wanted a kaffir lime, so we asked our local nursery to order one for us. While we were waiting for it to come in, I spotted a full grown one on clearance at home depot. A couple of years later and they are both thriving. I know what to do with the leaves (which is why we bought them), but we also produce a large amount of fruit. Does anyone have any recipes or suggestions for using the fruit?

@Lynda, In India, we squeeze the kaffir lime juice onto simple lentils and rice. You could try in a lentil soup as a garnish at the end. Also, since the rind is also aromatic, we rub it into the mix of lentils and rice, kind of like garlic is rubbed onto bread in pa amb tomaquet.

@dkgelm5 Thanks for the great suggestions. Lately, we have been using the juice, leaves and rind to make curry paste which has turned out to be a great way to preserve the abundant harvest.
