How to stain a raw dining table

Any ideas on how to finish this table for a matte, light/medium natural look? It doesn’t say what type of wood it is but I think it’s probably pine.. i’ve read a coat of poly would make it go orange? It’d be for the kitchen so I’m looking for workhorse for chopping, homework, socializing... thank you!!

Use a food safe finish like Watco, Waterlox or Sam Maloof brand makes one also.

If you stain it knife marks will show so I wouldn't stain it.

Knife marks will show anyway, because, that isnt the type of wood, that is meant to chop on, unless you use a chopping board on top of it.
