DIY 1st time tiling

i am about to take on a backsplash installation and am seeking advice on a couple of the details. My plan is to use white beveled subway tile. My question is about this wood trim that the previous owner used to transition from the countertops to the wall. Should I tile on top of this or remove this trim and tile on top of the counter top? In the first picture if I remove the wood trim, the tile would no longer fit well in between this space. in the 2nd picture there’s a wood corner piece, should I remove this and use a finishing piece or can I use this as an end piece? any tips/ advice would be great. thanks!
