Houzz is a great resource for room photos. If you are going with granite, it would be a good idea to look at slabs and select some you like. Bring a cabinet door and a sample of your flooring with you. Let the granite become your road map to making other color selections in the room such as paint color and backsplash tile.

A black and white kitchen is timeless and if you do it correctly it can look amazing. With white cabinets and black appliances I think black granite, stainless steel or concrete (dark grey) counter tops would look good. I was also thinking about the floor and wall color, maybe a dark hardwood or grey/black tile with light grey or white walls.

Great! You'll love it. Play around with finding photos and creating ideabooks. There is so much on this site to explore. It takes some trial and error to figure out how to use it and find everything. But it's a very powerful tool.

Just as an aside, every one of our clients that have put in black granite have regretted it. Takes a lot of cleaning and maintenance. There are lots of options out there. I hope you're addressing the subfloor as part of the renovation. If you're tiling, I'd replace the diagonal boards with sheet goods, if not, then screw them down securely so you don't get squeaks. It doesn't matter what color the countertops are if the floor squeaks and the tiles crack.

I would use quartz and not granite

How about a soft gray granite or quartz to soften the contrast between the cabinets and the appliances? What treatment are you using on the floors?
