I bought the RibbonFlex Home 16 ft. AC Dimmable LED Tape Light Kit which I used to light a staircase. It is INCREDIBLY bright. Be sure you control it with a dimmer. I installed it in this Armacost channel. Note, you will see the individual LEDs through the plastic diffusers (which I don't mind).

I was going to tell you that # of LEDs per meter doesn't matter, what you care about is lumens per meter (or per LED or per any other convenient metric). But I went and poked around Armacost's website and they don't tell you that. So instead, I am going to tell you to run away from any manufacturer that doesn't tell you what the lumen output of their product is. Find some other tape light where that information is readily available.

You want 70-80 lumens per square foot (I thinks that's in the range of 700-800 lumens per square meter) for task lighting. Figure out your counter area and you can figure out how many lumens you need.
