Question for Mystic Pools or other pros

Mystic pools (or other pros & users) would like your input on best way to install cement pavers in FL. Have a project where I would like to use Shellock pavers in Ivory.

This is the product: https://www.artisticpavers.com/shellock

So you supposedly get the look of shell stone, but without the maintenance.

I believe they plan on dry laying on sand, over a packed gravel base. These will go under a covered lanai and around the pool area, about 3000 sq.ft total

A friend recently installed these same pavers, set on sand, over existing pavers. She is now getting brown staining along the joint edges in the pavers under the patio. The pavers that are exposed to the full sun don't seem to have any staining.

How do I avoid this staining?

What is the best way to stop moisture from traveling up through the joints?

Any suggestions much appreciated. I'm willing to pay more to install them properly and have less ongoing maintenance/cleaning costs.
