Sunflowers in summer problems?

I planted giant hybrid sunflowers from seed not even a month ago they are 2 feet tall and already starting to produce a flower bud in their new growth tips. i was wanting to plant more to see if i can get them around 8-12 feet tall because last year we had soke planted in april that flowered in june on 10ft stems. i heard if you pkant sunflowers around this time they will flower on shorter stalks. is that true?? i dug a hole 2 feet wide and 1 1/2 feet deep for each sunflower and have been fiving them lots of water whenever the top 2 inches dry get somewhat dry. i fertilized once a week with high nitrogen fertilzer. im just stumped on why it got to only about 2-3 feet before its forming a flower. if its true then ill just enjoy my short stubby sunflowers.
