Kitchen soffit with vaulted ceilings

I’m renovating my kitchen. I’ve attached a photo. The biggest dilemma involves what to do with the soffit. The kitchen is part of a dining and family room great room with vaulted ceilings. Option A: I’m considering removing the soffit and upper cabinets, purchasing a venting range, tiling the wall where upper cabinets were. If I do this I’d like to Install one natural wood shelf on that wall and stop the tile at the shelf. Then I’ll add some interesting sconces above the shelf.
Option B: Remove upper cabinets, keep soffit and tile up to the soffit. Put lighting in soffit to shine down on counters.
I know soffits can be an eye sore and I don’t like them, especially with the odd angle the soffit is creating when the ceiling angles upward. The only reason I’m considering keeping it is that it creates a more grounded, cozier “feel” in an otherwise wide open space with vaulted ceiling.
And, yes, I’m removing the ceiling fan and lowering the counters.
