You left compsites off your list.

Have you chosen a fancy doo-dah very tall water faucet? And if so, why?

Experts, please correct me if I am wrong, but I think the taller the faucet, (the greater the distance to the sink from where the water comes out) it would make more noise, all else being equal.

Composite. LOVE them. So quiet. Ahhhh. :) Stainless is worst, in my experience but I know some have better sound reducing qualities than others.

I chose a good quality undermounted stainless steel sink, and am very happy with it. It is classic, quiet, and easy to clean.

Water sound???? Water makes a sound and is an essential part of a kitchen not sure how any water sound is bad. as for sink material IMO there is only one and that is stainless the best quality you can buy undermount is great and a faucet that does not have an abnormally high arc but water will still make a noise I find mine on spray is a bit less noisy I guess.

I have always had cast iron and have never even given water sound a thought, probably because there is none.

I would think the denser the material the quieter the sink. Stainless would seem to be the noisiest but you can get sound absorbing padding and a heavier guage should be quieter? Our heavy 36 year old kohler enameled cast iron is super quiet albeit we are about to replace it in a full kitchen remodel hence I am reading loads of posts!

Copper has not been mentioned…..

PS - kculbers your kitchen is beautiful!

Stainless undermount. We have a top-mount composite sink where we’re renting, and I hate it. It never looks clean (it’s black/grey), and the suction cup attached sponge holders we use won’t stick to it because the surface is slightly pebbly. Cast iron and fireclay are both too glass break-y for us. We a had cast iron sink (and tile floors) in Mexico, and the toll in broken glassware and dishes was rather appalling.
