The term you are looking for is 'palmate'. I'd also consider searching under compound leaves. And lobed, which actually has a different botanical definition from palmate.

There’s a compact, globe-shaped shrub form of Sweetgum with a cultivar name of ’Gumball’ (I believe), but it’s probably not too widely available except at specialty nurseries.

Aesculus parviflora has palmately compound foliage and is another great specimen shrub.

Ricinus won’t be perennial in your area, but it’s another option that forms a very large “shrub”, even as an annual.

AWRITE!! Thanks so much, palmate is just what I was looking for. Castor bean and Ninebark and Rose of sharon, yes! "PALMATUM," of course! "cutleaf" and acerifolium are also words I can search now, thanks. I thought of the Monstera and Xanadu type Philodendron, too.

Fatsia japonica is another good one.

Bear in mind that the size of the leaves of your examples varies widely. If you are looking for interesting leaves, some of them, despite being palmate, won't make much of an impact. They are rather small. eg Rose of Sharon vs Ricinus.
