We have sulfuric acid in our stomachs that will quickly digest them. And scales do not eat animal flesh. I did not look up anything but I can not see how any scale insect that attacks plants would harm humans.

...and if you plan to peel, don't worry anyway. If they gross you out, a vegetable brush might knock enough off to be less offensive.
