Are you asking what color bulbs should be installed in the fan. What type and color temperature of bulbs are there now?

The "mood" with a "softer" light 'bulb', which would be a color temperature of 2700K-3000K, feels 'warmer' being called "yellow." It also will probably play better with your antique brass, alabaster glass covers, and wood tones. But make sure the recessed light 'bulbs' in the soffit of the same room are the same color temperature.

The "whiter" light 'bulb', which would be a color temperature of 3500K-6000K, feels 'cooler' being called "bluer." Since the eye perceives a sharper difference in color better under this "bluer" light, things are "crisper" which may feel like a different "mood."

Replace the fan with an appropriately sized and installed ( half the size of the table and hung around 33" over table) chandelier on a dimmer.

I don't think a fan will provide the mood you want in the room. As is, blow out the candles...

Ceiling fans are tacky over a dining table, replace it with a chandelier or light fixture. Dining room lights should always be controlled by a dimmer switch to set the mood.

I use 3000K bulbs in my dining room fixture.

I agree with cleangeek and judianna20 - if the fan is over the dining table replace it with a chandelier on a dimmer.
