How to care for quartzite counters in kitchen

For the 50+ years I have had my own kitchens, countertops have always been essential bulletproof tile. Now, because of mold problem, we have had to rip out our old counters and are replacing them with Mont Blanc quartzite from Brazil. From following threads here, I gather this is one of the softer quartzites and I am sort of in a tizzy wondering how I am going to keep these counters clean. We ended up with a different soft quartzite or perhaps actually marble in the master bath, (Vermont White) but our excellent stone man sealed it so well that water doesn't seem to be a problem. A working kitchen, however, is a whole different story and I really don't want to spend the next 50 years babying this thing. Any advice re hot pans, wet pans, cleaning solutions? I currently use 7th Generation Disinfecting Kitchen Spray but it tests highly acidic. I have asked our stone man for scraps to test cleaners on but I also respect the acquired wisdom here. And yes, I know we should have gone with granite but we were replacing 35 years of white tiling and granite just looked too dark
