Yes that will work. So will most any other apple (with a few exceptions) that is in flower at the same time. Synchronous flowering is key. btw, apple pollination charts are easy to find online although not all charts will record all apples so you may need to hunt and peck a bit.

Please explain more about the bonsai. I'm not sure I've ever seen a bonsai'd fruit tree. Can they even produce fruit? All that pruning and limb reduction and the weight of heavy, ripening fruit......sounds like a high risk proposition.

Yes, they can produce fruit. Also, my fruit bonsais wont really be going for look so much as to ”functionality” I guess I could call it. Their main purpose would be to be able to grow fruit indoors or in pots.

Apples can certainly be grown in containers, especially those on dwarfing or mini-dwarf root stock. But they do need to be grown outside - they will not flourish and produce indoors - and there is still the risk of the trees being strong enough to support the weight of the heavy fruit.
