I'd go led cans. Boy, that was easy. And cheap.

I prefer #1. Though I'd tend to want opaque glass on a fixture above a dining table. I've found that Edison bulbs don't put out very much light.

I would only do one pendant which would be over the table. The other fan should be replaced by ceiling cans. That space in the kitchen area does not fit with a pendant. Hire an electrician and install ceiling cans to provide proper lighting for your kitchen.

For the pendant over the table, I prefer your pic #1, because your kitchen already has a ton of sharp angles and straight lines, and that is enough, no need to add more that are in the #2 pic.

But actually, I advise you to wait on this choice until after you have done the update you mentioned. That is when you would pick the pendant light. Otherwise you are putting the cart before the horse.
