I have a 44" range in my home, I'm right-handed, and I chose to have the warming cupboard on the left :) For us, it was mostly a matter of layout, as there is a wall next to the range on the left. It makes more sense to have the cupboard door open towards the wall and do most of the cooking on the main burners above the large oven "away from the wall".

From a practical standpoint, I find that it also makes sense to have it on the left. If I want to put a heavy dish in the cupboard, I carry it with my "strong" hand (right), and use the left hand to open the cupboard. The door swings "away" from me and my strong hand, and I have clear access to the cupboard. Doing the same thing with the cupboard on the right would be more difficult and less natural.

For the ovens, both gas and electric perform just as well, and putting aside the subtle differences between gas and electric, it mostly comes down to personal preference. The electric ovens are slightly easier to use, especially if you have family and friends who might help with the cooking from time to time. The electric ovens also offer a broiler function that the gas oven does not. If you have been using electric ovens in the past and are comfortable with it, there is no reason not to have 2 electric ovens on your new Lacanche range (the same goes for gas, for those who have used gas all their lives and are not interested in electric, having 2 gas ovens is perfectly fine also!).
