My experience with the auto programs is that they do include a prove interval. The auto programs can only be modified for browness level but not the steps that they are using. I have used their baguette function and put them in the CSO right after shaping/slashing and a very short rest. It works quite well. It appears that Miele has made major modifications to their user manual with the new 7000 series. My 6000 series included a table for baking serveral type of bread using the Combi Steam mode. It detailed out steps that you can use as a starting point for you own programs. I am traveling and will post it when I get home. Google “miele combi steam focaccia“ and you will get several youtube videos on making focaccia in a CSO and links to recipes.
