Dex’s Sweet Potato Treats (2021)

1 sweet potato, baked or microwaved, approx. 1 cup

2 1/2 c. Whole wheat flour

1/4 c. Unsweetened applesauce

2 eggs

Preheat oven to 350 degrees.

Mash sweet potato. Mix all ingredients. Turn dough onto a well floured surface, and roll to 1/2” thickness. Use cookie cutters or a pizza cutter to cut into appropriate sized pieces. Place on ungreased cookie sheets.

Bake until crisp, 35-45 minutes. I do 40 minutes for the very small size. Cool on sheets for 10 minutes. Remove to cool completely on wire rack. These freeze very well.

Per serving: 43 calories, 1.8 g protein, 8.5 g carbohydrates, 0.5 g fat, 11.6 mg cholesterol, 8.8 mg sodium (It doesn’t say what size a serving is, so I’m guessing a small dog biscuit.)
