To install a recessed cabinet the wall studs need to be in correct positions - have you figured that piece out already? Is that the toilet next to sink? Would you stand in front of toilet to use a mirror? I’d look for a mirror that’s the same size as cabinet for a more balanced look. If I replaced cabinet, I’d look for one with no open shelving for more storage options.

I would just do one cabinet and a piece of art above the toilet . Is this a bathroom joined to a bedroom ? A new light fixture that is nicer than the builder one you have could for sure add some good LED 4000K lighting and I need to see the space , all of it. Post the pics here in a comment do not strat another post.

Thanks for your comments. Yes, toilet next to sink and no, I would not stand in front of toilet to use mirror. I just thought that having 2 mirrored cabinets would look more balanced.

Thanks Patricia - I like having art and one cabinet; the problem is I am giving up storage from the cabinet and did not want to do that. I am planning on new fixture.

Is this a powder room or is there a shower or tub somewhere else in the room that we can't see? I think two medicine cabinets next to each other will look strange, but if the space is more important to you than the appearance than there's really nothing stopping you. :-) If you're replacing the mirror maybe you could find another cabinet similar to what you have already, but higher end so it's more attractive, although the one you have isn't terrible. It's just basic.
