wood flooring dilemma

We’re doing a huge kitchen remodel in Old Town Alexandria, VA. We are replacing our kitchen floor. We just found out we can not get the same size plank as in the adjacent room (2 1/4) without wanting several months. The flooring company can install 3” floors in a matter of weeks. If we wait, it pushes out inspections and installation of everything. Btw, full disclosure we’re only talking a month. But that’s if everything in the project runs smoothly too.

Would you wait for the original plank size of 2 1/4, install 3” wood plank size even though it’s different from the living room or would you consider a different flooring material? If you chose the later what flooring material would you use?
