I would paint the doors/framing the trim color -

Generally they would be the same color as the trim. Wall color isn't usually done unless you want a door to disappear into the wall. Are your doors black in the rest of your house? If not, black isn't really a good choice based on the fact that you said you don't have black in the rest of your decor.

The wall color is pale oak and the trim is white dove. You’re saying I should get white French doors and paint the doors and the trim white dove?

Like @kandrewspa said typically, they would match the trim's color to frame off the whole look and feel of the space.
