Give proper care, it should leaf out again.

all otherwise healthy trees can and will releaf ...

yours was in some stress from shipping from grower to seller to your house.. etc ... but otherwise one should presume its healthy...

just protect it for the next week or two.. until all possibility of frost is gone.. then plant it ...

on the other hand.. it might be getting late to plant.. so maybe we should just plant it...

Get it planted (making sure it's not rootbound in the pot), keep it watered. In all likelihood it will put out new leaves to replace the damaged ones.

Japanese maples are resilient and some plants have come back from much worse. It may take a few weeks, but it's likely the tree will produce new leaves eventually. Make sure to provide light, warmth and water in the meantime. Hopefully you'll have beautiful new leaves sprouting soon!
