Sure you can, if it works for your own height. My vanity height is 34.5 “ and my quartz countertop is 1”. I am 5’6” and my husband is 6’2”. Our vanity height works well for us. I have seen posts on Houzz where very tall people choose heigher vanity heights when they remodel, for improved ease of use. Best of luck on your journey.

Our house had the low vanities in bathrooms and we weren't ready for a complete remodel but they really bugged me. we disconnected the plumbing, pulled off countertops, installed 1x4s around cabinet perimeter and put everthing back. Once we painted the cabinets it didn't look bad although we have since replaced the vanities.
