They aligned the grout joints so they flow up the bench and onto the wall. Leave it alone. Tearing it down will likely damage your waterproofing.

But was that really neccessay for them to align groute joints? It doesn't make sense because in other bathrooms in the house, we have it is not like that. So I feel like this was just lack of thoughtfulness on asthetics

I agree with Hallett. Trying to redo would compromise the waterproofing.

While disappointing, I would let this one go. It’s a bathroom, not a kitchen In time you will make peace with it and move on.

You can tile over tile according to the TCNA; no demolition or risk of endangering waterproofing.

I'm not a fan of tile on the flat. I'd install a solid piece pitched cap on top the bench. Maybe a nice contrast to all that darkness.
