Can you post a picture.? I'm having a hard time imagining why you'd want to cut any leaves off. You could, but why?

When Stromanthe (and Ctenanthe) begin to become mature they may make strongly upright shoots that then make a fan of leaves at the tip. If one leaves them, they may flower. The fans may also be used for propagation.

If they annoy you, yes, cut them off. Won’t hurt the plant.
