I'vedone 'em, but always ad hoc. Tell me a flavor profile or ingredient you want, I'll come up with a skewer. Unless it's outdoor barbecue and swim, no drippy or dippy! You can put tuna salad on a skewer if you stuff it into a cherry tomato with the top back on, or a mini pepper. Stuffed dates alternating with chunks of pickle look great and are fun to eat, swinging between sweet and sour and both salty in different ways. You can fill mini choux puffs with vegetable whatever, but the filling can't be too damp, and you need ”washers” of something stiff and pretty dry, like thickish carrot slices. Any of these stuffed elements can be alternated with chunks and ribbons of veg. Zucchini and carrots make great ribbons. Radish roses make great chunks.

And sorry - just 'no' to the sprouts on skewers - even tho I do like Brussels sprouts.

I was at a wedding last week. One of the passed appys was peppadew peppers stuffed with cream cheese or maybe it was goat cheese. Each one had a pick in it. I also like dates stuffed with a chunk of parm about the size of the date seed, wrapped in bacon and baked. They are generally served with picks in them.

Sticky chicken mini skewers, devils on horseback, garlicky prawns, little slice of steak on a mini yorkshire pudding, sous-vide confit tuna with a zest of lemon....... anything you can stick with... well..... a stick!

@carolb, but the sprouts are so beautiful!! I kind of agree; they don't sound so great with cocktails, but I really get tired of high fat, salty, processed meat or cheesy bites. I love offering something a tiny bit more healthy and I'll bet they are delicious, esp if you can get tiny sprouts.

Perhaps marinated mushrooms would be a better combo...?

Mustard prawns are a nice finger food....

Chicken teriyaki with fresh pineapple chunks and circles of blanched pea pods. Stick the skewers in a fresh pineapple (or a fresh pineapple halved lengthwise). Makes a nice presentation.

Bloody Mary skewers - Marinated cherry tomatoes using vodka, olive juice, Tobasco sauce and spices (I use Mrs. Dash table grind), olives, celery, shrimp and candied bacon.
