Don't remove anything till you have a plan, and the materials at the ready. Right now those weedy and not so awesome plants are holding the hill in place best they can. If you remove them before you are ready to replace, you will likely get erosion next time it rains. Looks like you already got some spots.

Don't know which trees you mean at the top? But do keep in mind their root systems and how much they might be anchoring the area too before considering removal.

The two "trees" look like Hydrangeas. They'd be improved by pruning and watering. They're not a problem. Leave them be.
