I think I would start with painting the wall. Maybe some small pictures stacked vertically on both sides. A nice window treatment. Then stand back and see if shelves or tile would improve it.

You took the cupboards down because they closed things in. Let the space just be as it is. It is a pretty window with a nice view. That wall doesn't need anything else on it.

We are repainting the bathroom it just seems boring not to have anything on the wall. I only have one painting on the opposite side wall and the shower stall on the other side which takes up the whole wall. I guess maybe something on the new countertop for some texture and appeal?

I wouldn't put anything. get a tall vase w/some stems or leaves, maybe an orchid.

I'd paint it, and don't put anything there for a few weeks, even months. Once you've lived with it that way, if you still want to add something, maybe a tall thin sconce on either side something like these. Don't be afraid to purchase a couple lean them on the counter so you can imagine iit afixed to the wall. A nicely scented candle with a morrored back will reflect a candle's flicker. I prefer the more modern straight lines, but either one of these two would look nice and let your preference/personality shine through. Getting a sconce that relies on candlelight eliminates the need for wiring the walls. You can always use battery powered candles, but I have yet to see any that has the beauty of a real flame. Consider finding something that uses those tiny fairy lights. Or consider wall vases where you can display the seasons blooms. Good luck!
