Hi. I want to be sure I understand correctly. You want a kitchen with a guest bathroom. We call this a powder room (PR below), and we try to make sure that doesn’t come directly off of the kitchen. You have a powder room above your kitchen that does not open directly off the kitchen, so that design is good.

You want an open American kitchen. What we would (generally) do is remove the wall I circled below between the kitchen and dining room, and build a peninsula or an island with seating between the two.

not sure the open concept also stretches to include island.....typically the 60-72 inch long table is quite common in non North American settings. Close up the small door to kitchen from the hall and extend the cabinetry down that wall.. This is a large u shape kitchen with the open part of U created with red marked wall removal as sketched out. Start with that .....perfectly okay to keep the table.
