By the time you add the 1600 CFM ventilation plus required make up air, you are in the 25-35K range for this oversized want. Way more, actually, by the tim you add all the other appliances that should be at the same level as the range.

I have, and can recommend, the American Range ”Performer” ranges with open burners. This is if you want as close to a commercial range as is available in a residential-legal unit. These are all gas, no electronic features at all, lift off open burners, heavy duty - basically like cooking on a commercial Garland or similar.

For hood, you might consider a commercial unit, for the large capture volume. I have a CaptiveAire 48”. They now make a residential unit. It doesn’t look residential but is designed for residential spaces.

I do not think you necessarily need the full CFM that might be calculated from the range BTUs. Consider what kind of cooking you do, how often you will really have all burners on full, etc. But certainly at least 1,000 cfm.

This big of a range may require an upgrade to your gas service and will be expensive including venting, and absent something unusual about your household you probably won’t use it fully most of the time. You might want to consider a smaller range with a couple of induction hobs you can set up on the counter as needed, or a wall oven.

If your family loves to cook, I think you can save money by going bigger. Two 30" induction slide-in ranges next to each other or at separate work stations can cost as little as $2k plus the less expensive two hoods. And two 50A 220v outlets. A Frigidaire has received good reviews for years here. Bosch also has a unit with knobs. Bosch makes the induction portion.

For function I think a Bluestar RNB is the best consumer option currently available.

We had a Lancanche for 10 years and loved it. Been using a Bluestar 36" for 1.5 years in new house and would not recommend it. Bluestar cooktop is okay, but the 36" oven is way too big to heat up quickly and to be useful. The craftsmanship IMO isn't great, especially when compared to Lancanche, which is admittedly $$$$. I'd probably look at Wolf in lieu of a BS if Lacanche was out of price range.
