Do you have a fave recipe?

I was looking at one from Sallys' Baking Addiction. https://sallysbakingaddiction.com/pineapple-upside-cake/ 

I found this interesting:

I’ve been making pineapple upside down cake since I could hold a spatula. I’ve made hundreds of versions, or so it seems, and I say with 100% certainty that this cake will always be on the denser side. (Unless you are using store-bought cake mix.) You see, the cake is served upside down. The weight of the topping, which is the bottom of the cake as it bakes, weighs down the crumb beneath it. Pineapple upside down cake will never be as light and airy as white cake. If you were to make this exact cake batter and serve it right-side-up, the cake would taste much airier.

Curious. What if you made the cake and didn't flip it upside down until closer to serving? Would it be less dense?

    My only pineapple upside down advice is not to put birthday candles in it while it’s still hot. A friend did this! She’s not a very accomplished cook!!

    This is the one I use. It is from the old BHG cookbooks. The old cans had five slices of pineapple, the new ones only have four. Unless I want to do the rings and cherries, I just use crushed pineapple in the right amount and no cherries. If I do want the rings and cherries, I buy a bigger can and use the leftovers for something else.


    ETA: I use a nine inch cake pan.

    I have a recipe using fresh pineapple that sounds really good, but the prep! Honestly, it's so easy to pop open a can of Dole and there you go.


    You know, I was thinking that but then I remembered this product, fresh in the produce Aisle. I have seen it sliced in rings and whole. I think I will go this direction and use the F&W recipe. I am not sure about the cherries...

    Okay Mtn, you have me checking up on things. The recipe with fresh pineapple has more work/time than prepping the pineapple. I often buy fresh, presliced pineapple at my store(s) and that would suffice. I wouldn't even care if they weren't in perfect circles. It doesn't matter to me. However, there's a caramel sauce to make and cooking the pineapple (more work and time). I'm sure it's worth it, but I can't get *that* motivated yet. Here's the link to that recipe.

    My tried and true is here in all its aged, food-stained glory. It came from a magazine at least 35 years ago. I do not use any lemon juice or zest, but if I did I'd put it in the topping, not the cake. The topping is ooey gooey rich and sweet so a little lemon would cut that slightly. I don't use Crisco much, but it seems to work here. I use a large glass pie dish. If I have extra pineapple slices, and I usually do, I put small sections in between the rings.

    Oh jeepers. Now I have to dig out my mom's Pineapple Upside Down cake recipe. It was the best. Sigh. And here i have been trying to reduce sugar intake. Still, this is really a fruit thing and therefore healthy, right?

    FWIW, Carnival Cruise Lines has banned pineapple door decorations.


    ETA: Mtn, a dress for you to wear the next time y’all visit with the Bishop. Notice Lilly is a good girl. She’s kept all her pineapples right side up.

    Don’t use pineapple decor on your cabin door when cruising…topic that came up after friends returned from a 4 day cruise. They had no idea, until a nice couple knocked on their door.

    LOL! Actually we had this same discussion re: pineapples +/- 2 years ago-- i was very surprised then ... but remembered this time around.

    I believe it came up in a topic that included chico clothing.

    If you cruise, you know what the upside pineapple means. Well, I thought everyone did, but found out recently that DH had no idea.

    Certain cruise lines have more of it than others. DH didn't know until we went on a cruise line that has a lot of upside pineapple signs on their cabin doors.

    @schoolhouse_gwagain and @straitlover, My 10” cast iron skillet with a regular handle will fit in my Breville oven. (Actually it is a 10 5/8 in. skillet according to what is stamped on the bottom). Link to oven

    bbstx, I forgot, which Breville do you have? I just got the Compact one. The pan that came with it I believe is 10 inches, so I'm not sure a 10 7/8 inch skillet with the regular handle would fit. After posting that one above, I am thinking of ordering the 8 inch myself. I'm waiting on the two 1/8 Nordic Ware sheet pans to arrive. The pan from the oven that died is just a tiny bit too wide, and the one that came with the Breville wasn't a sheet type pan, so I ordered those as that's what I usually use for most stuff. I could see that cast iron pan being useful though - cornbread!

    The Breville I have is linked. Tap on ”Link to oven.” It would be so helpful if house would go back to a different color for links. Then we could find them. I’ve just edited my post to make the link more obvious.

    I have been on like 7 cruises and I had never heard anything about any upside down pineapple. Is this something new because it's been some time since I've been on a cruise. I'll have to google that! :O


    OK so I looked that up...to me that sounds like an invitation to a quick death in this day and age. I've been watching too many true crime youtube videos! LOL!

    I've no idea what an upside down pineapple means and do not plan to google it, lol. I do know that pineapples are carved all over historic houses in the south as the fruit is a universal symbol of hospitality. If I got something with a printed upside down anything I would assume the giver or writer did not know how to turn clip art right side up!

    OH GEEZ.


    By the way, I made my PUDC last night, to rave reviews. I used the recipe from Sally's Baking Addiction .


    The fresh pineapple sauteed in brown sugar, butter and vanilla bean was sooooo good. The cake element was also wonderful -- thanks to sour cream.


    All that said, I'd prefer a dessert with more pineapple. A few times I have made grilled pineapple with creme fraiche and served it with a crunchy cookie, and I like that better as a dessert.

    I absolutely love(d) pineapple upside down cake. I can’t remember the last time I made it. I can’t even remember the last time I ate it! Mom made it often. Maybe I need to invite some folks to dinner and make one. @mtnrdredux_gw, did you use the already ”peeled and cleaned” pineapple from the grocery?

    I like it too, bbstx. A favorite of my Dad's that my Mom made but I've never made one myself. Mtn's description of hers sounds so good, it has me wanting to try it myself.

    I could not recall the last time I'd had it either!

    Yes, I bought the whole, cored, "skinned" pineapple. I then sliced it in 1/3" rounds; it was just the right amount for the cake, with only one ring left over. This recipe was calibrated for the use of fresh pineapple, FWIW.

    In the comments people suggested that, after you remove the cooked pineapple, reduce the syrup for 10-15 minutes (but not too much!) and add a pinch of salt to it. I did do that.

    My Mom was not a baker so she used a boxed yellow cake mix but added a partial can of crushed pineapple to the mix and then added the rest of the can along with chopped walnuts in and around the pineapple slices. . She didn't like maraschino cherries.

    I should bake one this weekend when the family comes for dinner. I don't think any of the grand kids have had this - should be a novelty. I think I'll use Sally's recipe though.

    @maire_cate, Let me know if you try it! I saw some recipes with nuts but I feel pineapple is pretty delicate so Iopted to choose one without. Cherries would make it prettier, but it was a gift for DH and he voted no. Red dye scare dies hard.

    Oh that looks yummy and brings back memories. Well you know kids - they won't eat it with nuts and for all I know they'll want to know why there isn't any frosting! Hmm, but they'd probably go for the cherries.

    FWIW, this thread inspired me to use up some frozen pineapple chunks and make the cake today from the recipe Bunny posted. I had no cherries, and don't care for maraschinos anyway, and I used melted butter instead of shortening for the batter.

    It turned out well, but I should've used veg. shortening, I think; cake was rather pasty, which might also have been due to the 4 minutes of beating called for in the recipe.

    And hoo boy is it sweet!

    In other news, Walmart sells organic frozen pineapple chunks 🙂

    Oh, that reminds me, the comments in Sallys Baking Addiction suggest you reduce the sugar in the cake from 3/4 c to 1/2 c, and I did. The cake was very good, even apart from the pineapple. I attribute it to the sourcream.

    Yes to the vanilla ice cream.......thanks and adding those suggestions - reducing the syrup, adding a pinch of salt, reducing the sugar.

    Good to know about the frozen pineapple chunks, handy to keep in the freezer.

    I may try again at some future date with less sugar and a slightly different cake batter. Unfortunately (or fortunately for him), hubby has sworn off sugar, and son doesn't much care for sweets, so it's all mine and it may be awhile before I can finish it off. Fortunately it's not a very large cake.

    I tried a bite after refrigerating it and I liked it much better than warm, as the recipe suggests.

    The good thing about the frozen pineapple is it's less sweet than canned.

    carol, you need to use my BHG recipe posted above. It is perfect. uses canned pineapple, and is much better than the fiddly stuff. Some of the ”new” crap is just that crap. The original is much better.

    ETA: canned pineapple in own juice is not that sweet.
