I don’t think I would tile the side wall. Is that the stovetop pictured?

Yes, that's a stovetop, hence my concern of splatters.

The ”sidewall” to the left of the sink is a cabinet box, so don’t tile that, just make sure the joint between the cabinet and the counter is well caulked.

The sidewall to the right of the stove should be tiled - it is the best way to protect your investment. Honestly, I would not love the asymmetry, but over time you will probably not even notice it. Because the cooking hob extends to the front of the counter, I would tile that wall out as far as the counter. Do you have bullnose tiles or trim pieces for the exposed top edge of that wall? If not, you will need a Schluter edge that ought to be installed before you begin that side. Good luck!

I would not tile. Keep a damp rag handy, and wipe up. : ) in the moment My range is inches from a wall.....and rarely do I need to wipe anything.
