I would not do that. it will look weird from the inside and out. your primary prep space is going to be between the sink and the stove. it appears there is lots of countertop in the design unless you leave tons on the counter.

adding the additional over hang would greatly protrude an a small dining space as well.

Would you consider showing your full plan for the kitchen (including the side opposite the windows)?

The pros on this board would like to see a drawing with measurements, rather than a 3D mockup, of your renovation.

I don't like the idea of a countertop protruding over the window. It's going to look wrong, and hiding it with a plant will not really help.

Would it be possible to close up one of the doorways next to the refrigerator, and add cabinetry there? Without more information, my initial inclination would be to close the doorway to the right of the refrigerator (as you're looking at the fridge). That would gain additional storage and countertop space. It would be more expensive because of the additional cabinetry, but it might function better.

I had a smallish overhang in my before kitchen that we removed in the reno, so the counter is now the standard size 26" or whatever. It's totally fine. My kitchen is actually smaller than yours and it works (granted I don't have kids).
