Would you consider running your Helix Countertops up the wall as a backsplash?

Without knowing more about the space; the backsplash look cannot be similar to the counters as they will never look good together. Your options are either counter and splash be the same; or select a large backsplash tile that is somewhat dimensional style. We need to see what the cabinets are for the project.

Plain white or gray tile

Use back painted glass, or a monotone tile with some texture. That's a very busy counter, and it needs no competition. Something like Stencil by Daltile is matte, but has enough texture to be interesting without competing.

Hi there. Why do you want porcelain or quartz? What kind of cooktop do you own? Corian solid surface comes in solid colors, gloss or matte finishes, comes in a wall thickness, can be shaped, should you want that, and gives you a groutless appearance. It’s also less expensive than quartz, less likely to chip than porcelain, and completely repairable, should that be necessary. The only question is whether it can be installed behind your range, or whether you need stainless steel there.

There are many different tones of white. The one we know is a perfect tonal match is Helix. When you haven't found an alternative look at that option again. i think it will be understated.
