awkward empty wall in kitchen

I have not finished my kitchen remodel going on a few years now as it has been partially diy, we have had to shift finances towards making improvements for my autistic son’s safety (fence) due to elopement issues and just some indecision on finer details. Anyway, I opened up two walls, one goes to my living area and that is working out great. I also opened up the wall space between the kitchen and the dining which is nice, but has left me with this huge wall. Hubby was overwhelmed with doing any further big changes emotionally and financially so I decided against opening up another wall space going from the entrance (you see the pass through in the picture) it can be technically widened about 1/3 more and would help with the awkwardness I believe. However, we just cannot do anything about that currently and may honestly never. That being said, what would you do with this empty wall?? Fill it with pictures (would need help with ideas)? Built in bookshelf? Paint?

Btw, forgive the awkward dining space. I am planning on doing a built in bench seating in the corner at some point. I will probably post in a separate discussion for that one day.
