What's for dinner?

We haven't had a dinner thread in a while. I am feeling lazy, will choose one of my frozen leftover dinners made just for days like this. What are you having?

    Cupboard is bare. Have a box of spaghetti. There's some LO spag.sauce in the fridge. Hopefully it's still good. A choice of either a frozen veal parmigiana patty or frozen meatballs to go with it. Depends on how hungry I am tonight.

    mtn wins the thread with the second post! Sounds delightful.

    It's DH's birthday dinner. We have approximately one million interesting restaurants within a 15 minute drive and he wants to go to the brewery that we go to twice a month. Okay.

    Made this last night. Good, mostly healthy and easy but requires some marinade time so it's not a last minute thing. (I don't add the MSG.)

    No dinner tonight - we dropped off a ring to be adjusted at our jewelers and decided to have a late lunch. Nice appetizer of 3 shrimp cocktail and then the Quiche of the Day - very disappointing. What on earth did they put in it to give it the consistency of bread? Bread crumbs? and too salty...........

    Using up clambake leftovers, I plan to sautee leeks and garlic, throw in some crushed red pepper, panko white wine cherry tomatoes and the leftover clams and serve with linguine.

    Homemade ramen. It was vegan until I decided it needed a shot of fish sauce. I am not vegan, but I kinda like going there when I can.

    I could never give up cheeseburgers.

    I was going to roast a turkey breast, have mashed potatoes, fresh green beans with little pearl onions. Comfort food. Roofers have been in my way all day and - the noise! Day three and the noise is beginning to bother me more than a little.

    Instead it will be a quick dinner of coconut prawns and some coconut rice on the side. Hot, and quick. I'll cook the turkey tomorrow - if sane again by then. It's a big house. Single story so lots of roof to deal with. They are telling me they will be done on Friday but back next week one day for the new seamless gutters and downspouts. (they are matching the dark brown of my house perfectly with the gutters and downspouts so they should all but 'disappear'......)

    I joined DH at our beach cottage today — he came down a few days ago. We went out for lobster rolls and a beer in the pouring rain. (I mean, we ate inside. 😆)

    Made spicy chicken bites - very quick and simple - with buttered jasmine rice and broccoli.

    I had oatmeal with sliced peaches and toast with peanut butter. It was a foraging night 🙂

    Sausage and veggie pizza. It was a hard da, and an easy dinner.

    I had a late, very late lunch when I was out running errands, so no dinner for me. It was a herbed chevre and roasted tomato sandwich on local artisan bakery baguette. And a choc chip cookie.

    I had mahjong last night, so no dinner. i just snacked while I was there. DH went out for wings with some of mahjong husbands.


    Tonight we’re having Thai beef (turkey) with carrot basil salad and jasmine rice.

    We ate out last night. Tonight is chicken enchiladas over rice, along with lime chips and dip. (TM)

    We're so busy! I made 5 salads/put them in tupperware containers for later and fried up ground turkey/baby spinach/onion/spices...to make tostados with. Then everything will be handy for several days...we're fed with healthy home=made meals on hand!

    Ooh ohh, I get to have leftovers from last night's dinner: Garlicky Chicken with Lemon-Anchovy Sauce (NYT). Omg, just divine. It's a Melissa Clark recipe with a 5-star rating and almost 11,000 votes. It's so quick and simple, how can it be so good with such depth of flavor? Mine looked just like the photo. Anchovies are really most amazing. I use fish sauce a lot in most of my savory dishes, but this was the first time I tossed 5 anchovy fillets into the pan with my chicken thighs. They're miraculous. And smashing the garlic resulted in sweet creamy garlic.

    @Bunny I've had this recipe in my saved box for months and haven't prepared it. I'm going to try it! But I think I'll try to keep on the range instead of putting in the oven. I hate turning on the oven this time of year.

    @czarinalex that should be fine. I used a cast iron pan. Some commenters said it really enhanced the flavor being in the oven but I don’t think you need to do it. I had orzo with it but it was meh. Next time it calls for rice or couscous or a darn good rustic bread. Also next time I plan to double the amounts of all the aromatics. Hope you enjoy it.

    ETA: If you can, watch the video of Melissa making this in her home kitchen. It couldn't be simpler.

    Last night I had khao poon gai, chicken and vermicelli noodles in a coconut curry broth and topped with cabbage. So good! I will definitely try it at home!

    Tonight im sitting in a very cold airport — dinner will be starbucks!
