With those counter tops you won’t be looking at patterned tile, but solid glazes. The best way to escape rectilinear tile is to choose an interesting shape. This is Fireclay tile in Frost, in a Paseo shape. There is some glaze variability, which is nice, but not so much that you compete with the counters, and the shape is beautiful without being fussy.

For color, youre either going to harmonize with the counter material or the cabinet color. In this case I recommend going with the whites and grays of the counter material to brighten and expand the space.

Can you wait on the bs decision until after the counters are in? Best to show a shot then that includes floor, cabinet and counter AND wall paint.
