We are wanting to update our kitchen on a small budget. We also want to jut out the peninsula to create a breakfast bar. We want the kitchen to look larger and more of a minimalist look.

Is that a Dishwasher on the right? If it is then this kitchen needs more than an update, it needs a better layout, which will need a larger budget.

Where is the fridge? What are the rest of the spaces, left and right of the photo?

Your money might be better spent by saving for a better layout in the next few years and not spending any money on cosmetic updates for now.

Post a floor plan with dimensions for all walls, windows, doors, openings, etc.

Obviously, cleaning off the countertops (one small appliance only!), and the refrigerator/dishwasher fronts will make things more minimalistic at no cost.

This is definitely one time when the floor plan that @chispa mentions will be very helpful. From your photo, I am not sure how you would extend a peninsula
