I'd choose an inside mount blind, not a fan of cafe curtains.

even three separate blinds would be nice and clean/neat for over the sink... top down/bottom up would be my first choice for light control and privacy if needed.

Have you looked into top down bottom up cellular shades?

Get the thinnest cellular shade inside mounted, with the top-down/bottom-up feature mentioned above. Get the shade in a white color that matches your trim and with a light filtering fabric. You can have it all open, all closed or partially closed at the bottom for privacy and still keep the view in the top part.

for the roman shades, I was thinking outside mount, mounted about a foot above the window frame..It may have to be 3 separate shades though ..

Roman shades will really change the look of the window as there will be some kind of a lance at the top. It really depends on your style. The cafe curtains i would not do them though. We have solar shades in our living room and I like them. They provide light filtering and privacy but are discreet. They are not cellular shades, I also do not like those

Something like this would draw your eye up and add height and interest, using three panels.

I use solar shades for daytime privacy and heat and UV control the bonus is you get to keep your view . I dislike shades of anytype on windows that require more than one shade they never hang equal the solor shades just get installed and stay .but nighttime privacy is not something they have . I will state my opion on "privacy" it is more in your head than in relaity . I honestly do not believe I am so important that people spend their time watching what I do
