I'd do recessed lighting with undercabinet lights, if you don't already have those.

With 8’ ceilings, definitely recessed lights. You can’t spare the headroom, other than above any island/peninsula you may have.

We have undercounter lighting now. We've decided to go with can lighting since it is a small kitchen compared to current kitchen builds. Financially, a remodel is not an option. Just a refresh.
