What was the plan when you decided to take the pool down?

Are you bringing in fill/soil to level the pool area?

We have plenty of outdoor space at the house level. The view is from the house.

Yes, a low-key grassy space. I assume there is seating up close to the house that you can use to overlook this space to see the mountains beyond. I wouldn’t clutter it up - it would be a distraction from the real star.

Remove the bolts from the retaining wall and smooth it out.

The groundscape design came out more symmetrical than I planned on this one facing the house:

I don't know if you need the fence if you reduce the dropoff with mounded dirt and add thick straw or pine needle mulch and soft grasses. It would open up the view.
