Bathroom Remodel Planning

Hello! I am in the throws of planning a large sized bathroom remodel. I have a dilemma. Right now, there is a pedistal sink next to the toilet with a sink and vanity across the room 18 feet away. I will be replacing the vanity with two pedistal sinks (Kohler Escale) and I am relocating them to where you see "sink". Do I put in a new sink next to the toilet or do I cap off the plumbing and put something else there? If I cap it off, what do you think should go there? I have about a 2' x 2 1/2' footprint to work with. I want to cap it off. My husband wants a sink. :) The photo shows about 2/3 of the bathroom. Each big square is one foot square. The toilet cannot be moved. The curved wall in front of the toilet could be changed. Thanks for your ideas and opinions!
