My builder uses Houzz Pro to plan the timeline and give detailed estimates and daily updates with photos of progress, and provide invoices at pre-agreed key points in the build. This made the whole experience much more efficient and stress-free.
I bought 10# of Hatch Chile and had them shipped to me. Roasted them yesterday over Japanese Charcoal. Yum!
They are amazing. I immediately froze them on cooling racks and bagged them so they wouldn’t stick together. Freezing them makes all the blackened peel slide right off.
Crops were much smaller this year .Bugs and weather. Even the town of Hatch cancelled their usual huge roasting event. They smelled so good. I am definitely getting them every year from now on. You can buy already frozen shipped overnight from Hatch chile Store

They lonly look like Anaheims. Very different flavor. Kind of floral in the way they call habaneros floral, but a different version. I think you need the terroir of Hatch Valley to make them taste right. They range from ultra mild to fairly hot (not as hot as serrano, but hot for a chili you can put whole (cleaned) into a sandwich). There's some magic by which they separate them by heat.
@Olychick I have never had an Anaheim chile so I can’t compare.
The Hatch chile comes in 4 heats from mild to xtra hot. My assumption is that it is unique to Hatch due to the soil, temperature/ weather etc.
These are certainly delicious. I bought a sack of them a few years ago at our Kroger and they were excellent as well but I don’t remember enough detail to compare.
I certainly will buy again next year! I preordered months ago so had a nice discount then. Had overnight shipping as well. Depending on weather conditions , this year was crazy hot , they would be fine with cheaper 2 day air.
If you get a chance try them. The temperature of the chile depends on the weather as well, at least I believe I read that on their web site. c
@HU-113737678 We always called the popular canned chiles used for Mexican food recipes and chiles rellenos, Anaheim chiles. So when I saw that you'd never had them, I had to try to figure out if that's what they were really called that...Well, to my surprise I found this article that says Anaheim and Hatch chiles are the same thing, lol.
I think there are a lot of them that are the same. I asked a friend who grew up in New Mexico what was the difference between Hatch and other green chilis. She said, "Better marketing." lol
@cookebook.....Smart man! Pueblo Colorado grows green chilies....they sell them on street corner parking lots here.....BIG barrels of them turning all day long...roasting them to perfection. One of the perks of living in Colorado! 🌶️ 🌶️ 🌶️
The difference is the flavor. I don't know if everybody can taste the difference, plus cooking/preparing can overwhelm either of them, making it hard to distinguish, but there is a real difference, The real Hatch chilis from Hatch NM have a floral, fruity flavor. Anaheim chilis from California have a sharper, greener flavor and are neither fruity nor floral. Hatch do have great marketing, but it's like the real certified San Marzano tomatoes grown on the side of the volcano in Italy vs. the same kind of tomatoes grown elsewhere. People's palates and flavor sensitivities vary quite a bit, so the difference may be lost on some, but it's there for those who can perceive it, unless it's been covered up by too much other stuff.
