Do NOT paint quarter sawn white oak. If you are thinking of making it a "modern house" there are architectural salvage companies that would come out, remove the wainscoting, crown and fireplace surround and pay you for it. If you paint that woodwork in a classic craftsman house you will significantly reduce the value. Woodwork like you have is like owning an original classic car. How about this, find an interior designer you like that works on original craftsman houses and get some ideas. Please don't ruin that woodwork with a bucket of paint.
