I love either the single deep bowl or the deep bowl with a 30/70 half-height divider (which makes it possible to wash vegetables in the smaller side without using a bowl, while still leaving room for washing large skillets and baking sheets). I don't find double sinks nearly as useful unless you wash all dishes by hand.

Look at the Kohler stages sink. It is pricey, but so functional if you are a serious cook.the raised section is the perfect place for prep work.

Single bay sinks (trending now) are perfect for larger items as well as everyday dishes. One popular style is two deep bays, one ex-large, one ex-small. Clients find the smaller bay convenient for preparing/washing/rinsing fruits and vegetables, etc. I would suggest to consider how you use the sink the majority of the time...decide which configuration would be most convenient for your lifestyle.

Definitely seeing the trend toward single basin undermounts and single basing apront front sinks.

Sounds like a large single sink works best in your situation. There is always the option to have counter dish rack if needed.

I'm leaning toward the Riverby 33" when we get new counters. It has a nice slope with the single drain, but there's a great rack to put into the sink that makes your soaking pans level.

Instead of using an unsightly plastic tub, I'm using a copper pan as my dishpan Ina single sink. It looks so nice.
