Well, what are you willing/able to do? If you really hate oak, you could remove it or drywall over it. Or you could hang ceiling to floor curtain panels on the windows. Or many other options. Can you clarify your own ideas?

My first thought was to paint it out white. The crown molding, wainscoting, kitchen cabs etc. in the rest of the house are white. I would hire a pro who specializes in it, but I was just thinking maybe a glaze-over finish might be nice. I am not opposed to removing it and just having drywall and maybe a wainscoting.

by the way, this is the previous owner's furniture. My style is much more eclectic with lots of reds, warm color tones and unique pieces.

Before committing yourself to doing anything major to the oak, how about googling 'tack rooms' and seeing if anything there inspires you? It isn't quite old farmhouse, but my brain went farmhouse->barn->tack room! and I've seen some very lovely tack rooms that have wood on the walls and still look rustic because of the other elements in the room. (Even without all the tack. :D )
