It looks lovely, and definitely like you have more than enough storage. Our kitchen is, I think, slightly smaller, and we put in an 8 foot window over the sink. We still have empty drawers. However, I don't know what and how much you have to store. Take an inventory or how much storage you will actually lose in the remodel and how much you may gain with smart built-ins (large and deep drawers, vertical storage for pans and cutting boards, dish drawers instead of upper cabinets for dishes, etc.). Maybe you can pare some stuff down as well. Goodluck!

Might be wise to remove the window between the stove the french door in order to create some upper storage spaces.

I'd keep all the windows and design more of the lower storage as drawers rather than doors and shelves. They're as easy to access as upper cabinets. I just completed a kitchen remodel and am SO GLAD I had them make the big drawers for my pots and pans and a slide-out shelf for under the sink.

I agree with above, get as many drawers as possible. You can put place mats, bowls, blender, in drawers - can't easily put them in cupboards without roll-out drawers - so make them drawers anyway.

You really don't have a lot of upper cupboards.

If it's about the view, keep the windows. If it's about natural light and open feeling perhaps putting windows in the space between uppers and base cabinetry would do the trick. Open shelving or floating shelves can be used in front of the windows or replacing them. Add glass front upper doors to the right side. Does not have to be clear glass if you need to hide things. Glass inherently gives the sense of a more open space
