My builder uses Houzz Pro to plan the timeline and give detailed estimates and daily updates with photos of progress, and provide invoices at pre-agreed key points in the build. This made the whole experience much more efficient and stress-free.

    The granite fabricator and installer that I use incorporates heavy flat steel plates that install to the top of the base cabinets and the knee wall in order to have the counter top overhanging without the use of corbels. Pretty sure you can cantilever the top approx. 15 inches with this plate.
